Thursdays Tasty Treat from the Garden

This morning I made my rounds of my little garden.  I have for the first time ever planted some lemon cucumbers and so far have picked 2 but I am sure there are many more to come.  Today I decided that I would try something new and created a Cucumber Salsa.


Cucumber Salsa Recipe
1 small lemon cucumber or half a regular one
dice 8 small tomatoes or 16 -20 cherry tomatoes
1/3 medium onion
1 fresh jalapeno pepper
a few sprigs of Fresh cilantro
a dash of lemon juice


dice the cucumber and tomatoes mix together and set aside.




Take jalapeno cut in half and remove seeds and veins, if you want a spicier salsa keep seeds and veins. Place jalapeno in a mini food processor along with the onion and cilantro then pulse until chopped fine.


 Mix jalapeno, cilantro and onion together with other ingredients.  Add lemon juice and salt to taste.  Use as a garnish for tacos or any other food.




I am serving this tonight for dinner as a garnish to some pinto beans and ham and homemade cornbread

WIP - Work In Progress Wednesday

My Wednesday Work In Progress is a new set of placemats using denim jean scraps and a fun bandana print fabric.



This fun set of placemats can be paired with the tablerunner I created yesterday and can be found in my Etsy shop.




I have been creating aprons using recycled denim jeans trimmed with a variety of cotton prints for a couple of years now.  The aprons are a great seller at a local Farmer's Market and local holiday holiday craft shows but the down side is that I have been left with a growing amount of denim scraps that have started to overflow my jean bin.  Creating this new table linen set has inspired me to continue to find a new use for all the scraps I have accumulated.
